Baking with Dorie

Baking with Dorie is a collection of more than 150 recipes from Dorie Greenspan, author of thirteen cookbooks and winner of five James Beard Awards and two IACP awards. The recipes cover the sweet, the savory, and the simple. Each is easy enough for a beginner to manage every technique, and each uses everyday ingredients.

The book still holds some surprises. Berry Biscuits and footlong cheese sticks made from cream puff dough are among the twists. An apple pie has browned butter and is spiced like warm mulled cider. A s'mores ice cream cake comes with velvety chocolate sauce, salty peanuts, and toasted marshmallows.

The chapters follow a classic layout: Breakfast Stuff; Cakes; Cookies; Pies, Tarts, Cobblers and Crisps; Two Perfect Little Pastries; and Salty Side Up. Throughout, "Sweethearts" gather small collections of the author's all-time favorites, such as the meringue Little Marvels and the Double-Decker Caramel Cake. As with all of Greenspan's recipes, these are meant to be remade, reworked, and riffed on.
