Emulsions

This work approaches emulsions both as a field of study and as a practical matter of formulation. It opens with the underlying theory and the physical properties that define emulsions, then explains the competing accounts of why emulsions remain stable or break apart. Later sections turn to emulsifying agents and their chemistry, the procedures and techniques used to formulate emulsions, and the ways emulsification and demulsification are applied across industry.
